The project was jointly completed by Nanjing Agricultural University, Nanjing Tianhuan Food Group Corporation and Zhangjiagang Deshun Machinery Co., Ltd.
According to reports, the scientific research results of fresh meat using chitosan antibacterial preservation and MAP modified atmosphere packaging and other integrated technologies, research and development of fresh cut meat plastic film bags and hot forming box MAP modified atmosphere packaging products, and The HACCP system for the slaughter of the cut meat production line was studied. The results of the fresh meat MAP modified atmosphere fresh-keeping packaging test shelf product shelf life of up to 8 days (4 °C or so), the product's sensory quality of fresh significantly improved.
It is estimated that by 2005, China's total meat production will increase from 60.46 million tons in 2000 to about 72 million tons, and small packaged fresh meat will account for more than 40% of the city's market volume. The MAP modified atmosphere fresh-keeping packaging can effectively prolong the shelf life of raw meat and has a good promotion prospect.
